Explore the former granary barn constructed by the Imbrie family in the 1850s that functions today as one of two McMenamins distilleries. Its crowning glory is a century-old, 160-gallon Alambic Charentais pot still. Originally found in an old barn in Cognac, France, this copper beauty now sits atop bricks recycled from Edgefield, Kennedy School and the Crystal Hotel. The first spirit released from its elegant curves was White Owl Whiskey, and the creativity and craft continues today. Many of the spirits born in our distillery were raised on a steady diet of Grateful Dead – and other artists, but the Dead has played a special tune in the minds of our distillers. Their first experimental whiskey recipes were based on beers from our brewery next door: Philosopher’s Stone and Barn Owl Bitter. When labeling a batch, brewers and distillers abbreviated these to Phil and Bob, so naturally, recipes dubbed Jerry, Mickey and Billy followed. Head Distiller Bart Hance explains, “We all used to be a bunch of Dead Heads.” Used to be? Eventually it was decided that a Garcia was needed, and this recipe, like the man himself, should be more colorful, so Bart and his co-distiller Arthur Price selected five colorful, flavorful grains and – nine years later, in 2021 - a new Devils Bit Whiskey emerged. Annual releases of Devils Bit join a growing collection of craft spirits: whiskeys, rum, gin, brandy and hazelnut liqueur. They work with all kinds of unique botanicals and natural flavors for McMenamins spirits, so it only made sense for them to apply that expertise in developing bitters that would complement our ever-evolving list of Northwest-inspired cocktails, as well as the repertoire of home bartenders. Our new line of bitters is available in four varieties: Cherry, Citrus Hops, Chocolate and Aztec Chocolate. Matching bitters to your favorite McMenamins spirit is as easy as matching the strength of one product to another. Our Cherry Bitters play wonderfully with Hogshead Whiskey (think Manhattans!) while our Citrus Hop Bitters complement the botanicals in our Gables Gin, and Aztec Chocolate Bitters pair perfectly with your favorite tequila. If you have questions about how to use your new bottle of bitters, ask your local bartender; they’re happy to help you create your new favorite elixir. McMenamins Aztec Chocolate Bitters Locally roasted cacao nibs, herbs and Mexican red peppers create a spicier version of the traditional Chocolate bitters, adding depth and intrigue to sweet or savory sips. McMenamins Citrus Hops Bitters Grapefruit zest, hops and a small amount of orris root—the fragrant rhizome of the Iris flower—make for a floral, citrusy addition to cocktails or seltzers. McMenamins Chocolate Bitters Locally-roasted Ecuadorian cacao nibs impart a rich cocoa butter and pure chocolate flavor that nicely accompany dark spirits and comfort cocktails. McMenamins Cherry Bitters Inspired by the cherry trees that surround the granary at Cornelius Pass Roadhouse, red sour cherry, dark sweet cherry and fresh herbs lend themselves to a tart and very aromatic flavor profile.
