McMenamins Handcrafted Shrubs

Our shrubs, or drinking vinegars, are crafted in the Grand Lodge Fermentation Chamber starting with the centuries-old Orleans method of vinegar making, using Edgefield wines and ales. Fresh fruits, herbs and simple syrup are added to create unique flavors, making these shrubs delicious in cocktails, mocktails, vinaigrettes and gastrique.

Select shrubs are available seasonally by the bottle at our bottle shops and hotel gift shops.
 
ALL BLUES BERRY SHRUBALL BLUES BERRY SHRUB Bottle
Fresh local and Grand Lodge blueberries are the essence of this delightful shrub. Infused with lavender to complement the berries, it pairs as well with lemonade or limeade as with cocktails. Mix it with elderflower liqueur, vodka and soda, or add a splash to a lavender lemon drop.

 




ARONIA-ROSE SHRUB BottleARONIA-ROSE SHRUB
North Amercan natives aronia berry and rose make a delightful pairing in our house made shrub that conjures images of woodland nymphs and garden fairies. Create a refreshing Aronia-Rose Spritz with Edgefield Blanc de Noir Sparkling Wine. Only available at Edgefield.
 





STRAWBERRY MOON BOTTLESTRAWBERRY MOON
The classic combination of strawberries and rhubarb gets a subtle kick when infused with vinegar made from Edgefield White Rabbit Wine. McMenamins cocktail specialists dreamed up this delight for summer afternoons: McMenamins Herbal Liqueur No. 7, Strawberry Moon Shrub, lemon juice and simple syrup. Drinking in a hammock recommended.
 





SUNDOWN SHRUB BOTTLENUI NUI PINEAPPLE-LEMONGRASS & LIME
With a bright, citrusy aroma all its own, lime adds punch to pineapple in this tropical shrub – pure sunshine in a bottle. Add to Three Rocks Spiced Rum and juices of pineapple, orange and lime to create a rum punch that will take you to the tropics anytime of year.

Vanilla plus fig makes for a creamy smooth all-around flavor. Add house made vinegar and you’ve balanced the scales at perfection. Stir Vanilla Fig Jig Shrub into McMenamins Pot Still Brandy, honey, sun tea and elderflower liqueur for a refreshing summer cocktail.







Cosmic Cool Aid BOTTLECOSMIC COOL AID
A cool ade for the cool kids. Originally concocted for Cosmic Tripsters, this sweet-tart fermented brew gained such a following that our fermentist started brewing it for everyone! Tropical fruits join coconut water to create a delicious tie-dye bright addition to your morning smoothie or evening cocktail. Only available at Edgefield.
 





BRAMBLE & BRIAR BLACKBERRY SHRUB BottleBLOOD MOON
The familiar, old-time flavor of sarsaparilla mingles with the sweet tang of blood orange in this fermented concoction that is at once modern and nostalgic. Add a splash to sparkling water or combine with Three Rocks Rum & vanilla ice cream for a rum-root beer float with a surprise of citrus.
 




 
YUZU SOLALL BLUES BERRY SHRUB Bottle
Fabulously fragrant, yuzu fruit takes center stage when lined up with its lemon and grapefruit cousins, and its distinct flavor lends libations a measure of tartness with a floral whisper. Add to Joe Penney’s Gin, lemon juice and ginger beer for an afternoon refresher. Only available at Grand Lodge.





 
RIVER WINDSALL BLUES BERRY SHRUB Bottle
At the convergence of tropical breezes and Pacific Northwest gales, the flavors of citrus and cranberry linger. Sweet-tart flavors are moored by grapefruit’s faint bitterness, basil’s delicate herbal notes and the delightful pucker of vinegar. Delicious in sparling water, cocktails and desserts. Named for the breezes that buffet Kalama Harbor Lodge, River Winds Shrub is only available there.





 
ALIENATOR TRANSFUSIONALL BLUES BERRY SHRUB Bottle
The origin of the Transfusion Cocktail is murky, but one thing is clear: made with Alienator Transfusion Shrub, its grape-forward flavor is out of this world. Balanced by zesty lime, ginger and black peppercorns, it’s a sweet-tart addition to sparkling water, Transfusions and other creative cocktails. Only available at Hotel Oregon in May for UFO Fest.
