Locals (as well as foodies) will know that this father of American cuisine used to summer here in Gearhart. We will pay homage to his great work as a chef and culinarian with this multicourse dinner.


Chicken Liver Pate
Cornichons, Terminator Stout Mustard and garlic crostini
Paired with Edgefield Brandy

Grilled Asparagus
With lemon, butter, fresh garlic aioli
Paired with 2011 Edgefield White Rabbit

Pan Seared Rainbow Trout
with Horseradish cream

Served over a chilled lentil salad dressed with lemon chive vinaigrette
Paired with 2009 Pinot Noir

Cracked Black Pepper Mussels
Local mussels steamed with our Pinot Gris topped with tomato concasse
Paired with Edgefield 2010 Pinot Gris

“Beef in the Raw”
Tenderloin Filet Beef Tartar
Fresh cracked pepper, parsley, shallots and capers topped with a quail egg yolk and served with toast squares
Paired with 2011 Zinfandel

Berry Trifle
Paired with 2009 Blanc De Noir
