As McMenamin's first brewpub in Washington, this location boasts a beautiful environment wrapped up in a blanket of history. Go see Head Brewer Jesse Grover, who is happy to answer all of your inquiries and give you a peek into the window lined brewery where he guides the paddle. How did mole come to be, you ask? Well the legend goes that while nuns were cooking for their archbishop, spices were knocked over into pots in which turkeys were cooking. The archbishop loved it. When asked how they made it, they replied "we made a mole," mole being an ancient word for mix. This brew is a mix of different flavors and spices. The flavor begins with a big cinnamon burst and finishes with a slight spice. These notes are balanced by the chocolate sweetness and coffee bitterness to create a full mouthfeel.
