Oak Hills Brewpub
Ale & Cider on Tap
Black Widow Porter
Originally created at the Thompson Brewery over 20 years ago on October 15, 1991 and made once a year by all Thompson Brewers to come after that, Black Widow has become an expected and welcome Halloween treat at the Thompson Public House in Salem. Black Widow’s web envelops the entire company every year now. Each deep-black goblet of Black Widow is packed full of the robust notes afforded by generous amounts of black and roast malts and further spirited with ethereal wisps of caramel and licorice. Both substantial and sublime, this elixir is sure to slake the most fiendish of thirsts. Open up a creaking pub door, find a seat with friends and family and nourish your inner ghoul with a brew steeped in tradition and mystery. A good howl at the Cheshire moon couldn’t hurt, either. High Gravity Ale

Hops: Horizon Additional Ingredient: Licorice Root
OG: 1.074 TG: 1.017 ABV: 7.35 IBU: 40 SRM: 38
A light, crisp and refreshingly fruity ale made with boysenberries. Purple Haze is very lightly hopped to allow the berry flavor to shine. Slightly more tart and fuller bodied than our Ruby recipe, this is a pub favorite.

OG: 1.040 TG: 1.007 ABV: 4.26 IBU: 4 SRM: 3
Dream Girl Summer Ale
The Dream girl wheat will put a smile on your face rain or shine. Brewed with Vienna and wheat malt, this American style wheat ale is sure to quench your summer thirst. Brewed with bitter orange peel and coriander, the Dream Girls has just the right amount of spice and flavor. Pairs wonderfully with any pub menu but is also unique enough to stand alone.

Hops: Nugget, Brewers Gold
OG: 1.048 TG: 1.008 ABV: 4.9 IBU: 25 SRM: 3
(CPR Brewery • Chris Oslin and Brady Romtvedt)
This is a “smash” beer which stands for “single malt and single hop”. This batch follows up on the success of Citra Smash and Mosaic Smash employing the dual purpose Simcoe hop. Look for herbal, earthy and fruity notes from this variety against the toasty Vienna malt in this hoppy golden ale.
Malts: Vienna Malt
OG: 1.041 TG: 1.007 ABV: 4.39 IBU: 42 SRM: 4
To celebrate the 24th year of the Oak Hills brew pub we have concocted yet another original recipe. The Red Rhino is a red ale so rich in color and flavor that it has earned the Oak Hills patented “Rhino” moniker. Just the right combination and amount of crystal malt gives this ale its signature, deep red hue. Red Rhino is hopped with pungent Centennials and Cascade hops and in an attempt to round off this pure “C” hop beer, Falconers Flight 7C’s pellets were added toward the end of fermentation.
Malts: Maris Otter, Organic Crystal-60, Crystal 135-165 and Chocolate
Hops: Centennial, Cascade, Falconers Flight 7 C’s
OG: 1.061 TG: 1.012 ABV: 6.32 IBU: 82 SRM: 16
This McMenamins classic has taken on a transformation out here on the Westside. This is a stronger more full flavored interpretation of the original. This version is more of an English style Pale. The Munich and Vienna malt provide a slightly toasted malt character, while the Willamette and Sterling hops add spice and floral qualities. This beer finishes smooth with just a touch of sweetness.
Malts: Two Row, Munich, Vienna
Hops: Chinook, Willamette, Sterling
OG: 1.055 TG: 1.010 ABV: 5.8 IBU: 39 SRM: 5
Perennial Pale Ale
The Perennial Pale ale is a flavor and aroma forward beer, without the bitterness of an IPA. Crystal 75 malt was used to give this ale is brick color. 5 pounds of meridian hop pellets and one pound of Falconer’s Flight pellets went straight into the fermenter to give the beer its ample aroma and hop flavor.
Malts: Premium Two-Row, C-75
Hops: Nugget, Cascade, Meridian, Falconers Flight
OG: 1.057 TG: 1.010 ABV: 6.0 IBU: 63 SRM: 8
Fort Knox IPA
This beer was made with pure gold. Brewers Gold that is! 7 pounds of Brewers Gold hops were used along with 4 pounds Nugget and Centennial hops for the perfect amount of signature IPA bite. Crystal-15 gives the beer its golden color. Just because the summer is on its way out doesn’t mean we don’t need our refreshing IPA any more. Flaked barley gives the Fort Knox some body and head retention. Cheers.
Malts: Pilsner, C-15, Organic Munich, Flaked barley
Hops: Centennial, Nugget, Brewers Gold
OG: 1.062 TG: 1.009 ABV: 6.4 IBU: 91 SRM: 5
On Nitro Tap:
Smoked Velvet is a surprisingly easy drinking smoked Ale. I love this style of ale, but I have often found that a lot of the beers in this style are so thick and strongly flavored that it’s impossible to have more than one. That’s why I have created a lighter version of this amazing style. At 4.7 percent alcohol, the Smoked Velvet goes down very smooth. The fact that it’s being poured on the Nitro tap gives the beer a very soft, velvety mouth feel.
Malts: Premium Two-Row, Smoked malt, Crystal 40, Caramel Munich 40, Roast, Melanoidin
Hops: Nugget, Perle
OG: 1.046 TG: 1.009 ABV: 4.77 IBU: 43 SRM: 15
On Nitro Tap:
Stormy Sky IPA
This is an IPA quite opposite of what you would typically see at Oak Hills. It’s Darker in color and more earthy and spicy in hop flavor. Being drawn out of the nitro tap, gives it a soft, velvety mouth feel. With our weather starting to turn towards winter, I wanted an IPA to represent the season. The Stormy Sky is a much more malt driven beer than the dryer, more summer like Clear Sky IPA. Weather you embrace the winter with Stormy Sky, or pretend its still summer with the Clear Sky, raise a glass of IPA!!
Malts: Premium Two-Row, Munich, Crystal 120, Chocolate
Hops: Centennial, Crystal, and Simcoe
OG: 1.060 TG: 1.010 ABV: 6.45 IBU: 83 SRM: 10
A classic Northwest pale ale and McMenamins top selling beer. This rich chestnut colored gem is a model of harmony between hops and malted barley. Hammerhead's signature Cascade hop nose and intense hopped flavor blend nicely with the caramel tones from the crystal malt. This beer has a vocal following. To run out is an unforgivable sin.
Malts: Premium 2-row Malt and 75L Crystal Malt
OG: 1.056 TG 1.010 ABV: 5.93 IBU: 44 SRM: 11
Black as the darkest night, rich as the most decadent dessert, Terminator is for the true stout lover. This is a full bodied and flavor packed ale which draws its robust complexity from kiln-baked specialty grains. Look for a wide array of toasted, chocolate, nutty and coffee-like flavors in every pint! The devoted swear by it, and it remains one of our top selling ales year after year.
Malts: Premium 2-row Malt, Munich Malt, 40L Crystal, and Black Barley
Hops: Chinook and Cascade
OG: 1.065 TG: 1.015 ABV: 6.45 IBU: 30 SRM: 35
One of our most popular standards, we still make Ruby with the same aims we had when brewing the first batch back in March 1986: To create an ale light, crisp and refreshingly fruity. Great Western Premium 2-row and 42 pounds of Oregon-grown and processed raspberry puree is used to craft every colorful batch. Simple but delicious. Taste the original!
Malts: Premium 2-row Malt
OG: 1.039 TG: 1.005 ABV: 4.39
