Ale & Cider On Tap
Sara’s Stupid Green Tea Wheat Ale
A wheat ale for my friends with a low tolerance for (and/or mild allergy to) hops. We used a small dose of hops for preservative qualities, and then a dose of Green Tea to aid in both bittering the brew as well as giving it a light floral flavor. All told it makes for something both delicious and none too heavy. Enjoy a few pints and cheers to our Highland pubstaff member, Sara, who thought the working title was too funny to give up for a brew-name more polite.

Time- Out ESB
ESB, or Extra Special Bitter, style beers are a nod to a day before the IPA, when a mildly hopped beer in the public house was just a ‘bitter.' This mild and approachable ale was brewed for those pub-going souls who find a little break with a cold beer to be one of the best parts of the day.

Get Low Golden Ale
When it comes to craft beers we brewers have a tendency to get carried away with gigantic, ambitious brews. We forget that sometimes you just want a nice, easy sippin’ Golden Ale. Low on color, low on bitterness, lower on alcohol, and low on threat to offend your palate here’s a crisp, refreshing pint to treat yourself with a few times over. Cheers!
Malts: 2-Row, Flaked Barley, Caramunich 40L

McMurtrey’s Respite Scottish Export Ale
The 80 shilling Scottish Ale is an old, durable style that will satisfies all pub-goers looking for a brew light on ABV yet full of flavor. We used Scottish Ale yeast to ensure authenticity of the brew, and fermented it with the care and attention of an ancient Pict. Named after our brewer’s Scottish ancestry and his affinity for a good spot to kick up his feet and enjoy a brew this ale definitely lands on the malty side of the brew spectrum with a very restrained dose of hops and a slightly sweet finish. Sláinte!
Malts: Ashburne Mild, Caramel Amber, Chocolate Malt
Hops: Golden, Sterling

Bittersweet Street IPA
An American IPA with tangerine and grapefruit citrus notes, and an added depth of light maltiness to boot. A higher finishing gravity leaves a little residual sweetness just before the refined American hop bitterness slides over for the finish. This is a great pint to raise in cheers to the bittersweet paths in life when we know we are moving on to great things, but also leaving wonderful place full of people that we love and are endlessly indebted to. Cheers, friends.

Copper Moon has a bit more malt quality and hop character than most other summer seasonals, giving rise to a refreshing, flavorful beer style that we like to identify as a Summer Pale Ale. A flavorsome yet summery smooth sweetness is the first thing you’ll taste. The hop flavor and aroma intermingle delightfully to generate a dazzling citrusy, floral and slightly spicy olfactory experience. There’s a Copper Moon risin’ again this summer across McMenamins, make sure that you check it out.

Hops: Horizon, Citra, Chinook
OG: 1.048 TG: 1.009 ABV: 5.03 IBU: 51 SRM: 6
Matt’s High PA—Imperial Pale Ale
No smoke and mirrors here. This is a high gravity, hop-centric brew that delivers dank American pine and citrus notes whilst not blowing out your palate with excessive bitterness. Soar ever higher on this winged brew as the Falconer’s Flight pellets add terrific levels of hop complexity in the dry hopping process. Dangerously drinkable and ever embracing the Pacific Northwest brew spirit with humulus lupulus we truly are hoppier than thou.
Malts: Pilsen, Caramel Amber Malt, Flaked Barley
Hops: Tettnanger, Horizon, Centennial
Dry Hops: Falconers Flight

Bodhisattva Chai Stout
(Collaboration project with Jennifer Kent at our Thompson Brewery)
Adam Yauch is a very familiar name for many generations young and old. A man part of The Beastie Boys that fueled the history of hip hop and brought forth different ways of thought. In his honor I present you with this big bodied stout. Soft notes of crystal rye malt help fuel the body of this beer with notes of Tibetan Chai which feature Darjeeling tea, ginger root, cinnamon sticks, and cardamom flavors. The artistry of the brewing world is something that I am always striving for. To be inspired by people who have left us is an even bigger honor. I leave you with Adams words …..”With the interconnectedness that we share as one/ Every action that we take affects everyone/So in deciding for what a situation calls/ There is a path for the good for all”
Malts: Bairds Pale, Flaked Barley, Melanoidin,
Crystal 135/165, Crystal Rye, and Kiln Black Malt

OG: 1.069 TG: 1.016 ABV: 6.84 SRM:34 IBU: 44
Our most popular ale has been tipped to the tartside! Ruby already gives us the refreshment we crave with its light deliciousness and a tainting of tartness and sweetness from the raspberries. But, now it’s time to go full throttle for a limited release to showcase the brew’s versatility. The rhubarb stalks have obviously contributed their characteristic sour qualities, and a small earthy note as well. A must try for Ruby enthusiasts looking for a little verve.
Malts: Premium 2-Row Malt
OG: 1.041 TG: 1.005 ABV: 4.30 IBU: 9
One of our most popular standards, we still make Ruby with the same aims we had when brewing the first batch back in March 1986: To create an ale light, crisp and refreshingly fruity. Great Western Premium 2-row and 42 pounds of Oregon-grown and processed raspberry puree is used to craft every colorful batch. Simple but delicious. Taste the original!
Malts: Premium 2-row Malt
OG: 1.039 TG: 1.005 ABV: 4.3
Black as the darkest night, rich as the most decadent dessert, Terminator is for the true stout lover. This is a full bodied and flavor packed ale which draws its robust complexity from kiln-baked specialty grains. Look for a wide array of toasted, chocolate, nutty and coffee-like flavors in every pint! The devoted swear by it, and it remains one of our top selling ales year after year.
Malts: Premium 2-row Malt, Munich Malt, 40L Crystal, and Black Barley
Hops: Chinook and Cascade
OG: 1.065 TG: 1.015 ABV: 6.45 IBU: 30 SRM: 35
A classic Northwest pale ale and McMenamins top selling beer. This rich chestnut colored gem is a model of harmony between hops and malted barley. Hammerhead's signature Cascade hop nose and intense hopped flavor blend nicely with the caramel tones from the crystal malt. This beer has a vocal following. To run out is an unforgivable sin.
Malts: Premium 2-row Malt and 75L Crystal Malt
OG: 1.056 TG 1.010 ABV: 5.93 IBU: 44 SRM: 11
Hard Cider & Perry
Edgefield Hard Apple Cider
Locally grown apples are juiced and fermented into a light, crisp and refreshing hard cider.
Edgefield Black Cherry Cider
4.85 g/L malic acid
3.2% residual sugar
Production Notes: The inspiration to create a dry cherry cider came directly from the poster, pictured above which hangs at our cornerstone establishment, the Barley Mill Pub. This poster was drawn and donated by a loyal customer and fan many years ago.
The Juice: The apples pressed off for fermentation were a blend of Red Delicious, Golden Delicious (added for color), Granny Smith (for acidity), and Fuji, Galas, and Honey Crisp (to increase sweetness). The fermented hard cider is then enfused or finished with Black Cherry juice.
Hand-crafted at the Highland BrewPub by brewer Tyler Staples unless otherwise noted.
