Ale & Cider On Tap

Screaming Eagle American Wheat Ale
Along with apple pie, baseball, and ranch dressing fewer things are more American than a good, light, clean American Wheat Ale. Right off you've got a great straw gold brew with a beautiful white head. Then you can expect the slightest hint of malt sweetness that finishes with mellow U.S. Goldings for those classic citrus notes. All told the beer is pretty mild so you'd better have a couple to effectively tease out all of its nuances!

Angle of Repose Cascadian Dark Ale
Often referred to as "Black IPA" the Cascadian Dark Ale is an ale with the Pacific Northwest at its very soul. Our love of deep, flavorful brews and a deep seeded devotion to maximum hop impact should not be kept separate. We packed our brew kettle full of Simcoe, Chinook, and Columbus hops to deliver a piney, citrus laden CDA with a wonderful malt profile straight to your table. Throw in the Galaxy and Citra dry-hops for extra measure, and you've got a beer that meets you at the end of the day just in time for good reflection. Recline, relax, enjoy.

Jam Session ISA
Spring is in full bloom and its song plays the soundtrack to a beautiful season. Wanting to add our instrument to the collaboration, the McMenamins brewers were inspired to produce Jam Session ISA, a light and easy drinking beer that embodies the spirit of spring as it fades into summer. Being an India style, expect our quartet of hops to be the front man of this band, providing strong riffs of floral and pine and a beat of citrus. A majority of the hops are added in late additions, which provides full flavors and aromas without the bittering astringency. Whether you're a hard-rockin' IPA drinker or a classical golden ale drinker, you'll find the essence and song of the season in every pint. Enjoy a Jam Session ISA and turn the volume of your day up to 11. A one, a two, a one, two, three, Cheers!

Return of the Wolchesky CDA (Nitro)
We asked Ben Wolchesky what beer he wanted to be welcomed back to the Highland Pubstaff with. His answer: Caffeine. So we added whole Black Rabbit Coffee Beans to our Cascadian Dark Ale and threw it in the cooler for a cold extract coffee effect. The results? A delicious blend of hop, malt, and coffee madness that is decidedly smoother and a little more laid back. Cheers!

Time- Out ESB
(Edgefield Brewery)
ESB, or Extra Special Bitter, style beers are a nod to a day before the IPA, when a mildly hopped beer in the public house was just a ‘bitter.' This mild and approachable ale was brewed for those pub-going souls who find a little break with a cold beer to be one of the best parts of the day.
Hops: Chinook, U.S. Golding, Crystal
Malts: Golden Promise, Rolled Oats, Victory, Crystal Malt II
OG: 1.048 TG: 1.012 ABV: 4.64 IBU: 56 SRM: 10

*Major Threat
(Edgefield Brewery)
The latest installment in our double IPA series is a true west coast double IPA. Hops were incorporated in every step of the brewing process from mash to keg. Nuggets were used for bittering and provide a smooth, mellow bitterness. Chinooks, Centennial and Santiam's were added during the boil to deliver a piney and citrusy burst of hop flavor. Then Tettnanger hops were added late in the boil to give a nice noble hop aroma. Finally, a mighty dose of Centennial hops were added during the end of fermentation for a blast of hop aroma. Cheers!
Malts: 2-Row, Dextra Pils
Hops: Nugget, Centennial, Santiam, Tettnanger, Chinook
OG: 1.086 TG: 1.017 ABV: 8.9 IBU: 87 SRM: 5

OG: 1.044 TG: 1.009 ABV: 4.52 IBU: 20 SRM: 4

Ask about our growler fills if you'd like any of our brews on tap to-go. We also have Ruby and Hammerhead bottled!

Ruby Ale

Ruby
One of our most popular standards, we still make Ruby with the same aims we had when brewing the first batch back in March 1986: To create an ale light, crisp and refreshingly fruity. Great Western Premium 2-row and 42 pounds of Oregon-grown and processed raspberry puree is used to craft every colorful batch. Simple but delicious. Taste the original!
Malts: Premium 2-row Malt
Hops: Vary
Fruit: Raspberries
OG: 1.039  TG: 1.005  ABV: 4.3

Terminator Stout
Black as the darkest night, rich as the most decadent dessert, Terminator is for the true stout lover. This is a full bodied and flavor packed ale which draws its robust complexity from kiln-baked specialty grains. Look for a wide array of toasted, chocolate, nutty and coffee-like flavors in every pint! The devoted swear by it, and it remains one of our top selling ales year after year.
Malts: Premium 2-row Malt, Munich Malt, 40L Crystal, and Black Barley
Hops: Chinook and Cascade
OG: 1.065  TG: 1.015  ABV: 6.45  IBU: 30  SRM: 35

Hammerhead
A classic Northwest pale ale and McMenamins top selling beer. This rich chestnut colored gem is a model of harmony between hops and malted barley. Hammerhead's signature Cascade hop nose and intense hopped flavor blend nicely with the caramel tones from the crystal malt. This beer has a vocal following. To run out is an unforgivable sin.
Malts: Premium 2-row Malt and 75L Crystal Malt
Hops: Cascade
OG: 1.056 TG 1.010  ABV: 5.93  IBU: 44  SRM: 11

Hard Cider & Perry

Edgefield Hard Apple Cider
Locally grown apples are juiced and fermented into a light, crisp and refreshing hard cider.
ABV: 6.8%

Edgefield Black Cherry Cider
ABV: 6.7%
3.4 pH
4.85 g/L malic acid
3.2% residual sugar

Production Notes: The inspiration to create a dry cherry cider came directly from the poster, pictured above which hangs at our cornerstone establishment, the Barley Mill Pub. This poster was drawn and donated by a loyal customer and fan many years ago.

The Juice: The apples pressed off for fermentation were a blend of Red Delicious, Golden Delicious (added for color), Granny Smith (for acidity), and Fuji, Galas, and Honey Crisp (to increase sweetness). The fermented hard cider is then enfused or finished with Black Cherry juice.

Fermentation: We employ a cool fermentation, aerating the juice for the benefit of yeast cell growth. Typically a bit of malic acid (the predominant acid in green apples) is added to keep a good acid balance in the finished cider. We then allow the juice to ferment totally dry and just before filtering added a generous addition of Dark Cherry Juice for sweetening, color and flavor. The dark garnet color presents a deep cheery nose followed by a hint of fresh apples, in the mouth the cider has prominent cheery flavors and rounded sweetness.

Edgefield Ciders are available on draft at all McMenamins locations and also sold in growlers to-go for home enjoyment. Recently, we have been able to increase our production and kegging capacity to be able to offer them to home draft customers by the 5gal Sanke keg. Please call the winery at 503.492.5467 for more information regarding dock sales of kegged cider.

Cheers.
